Ingredients

For the cookie dough:

½ cup Mazola® Corn Oil

½ cup brown sugar

1 teaspoon vanilla extract

¼ cup half & half

½ teaspoon baking soda

½teaspoon salt

½ cup rolled oats

2 cups flour

1 teaspoon pumpkin spice

¼ chopped walnuts

How to make the Oatmeal cookies Ice cream sandwiches

First, preheat the oven to 350°F/180°C. Line a baking sheet or tray with baking paper.

Put the brown sugar, vanilla extract and Mazola® Corn Oil in a medium bowl and whisk vigorously.

Then add the half & half and whisk vigorously

Add the all purpose flour, baking soda, pumpkin spice and salt and mix with a wooden spoon until everything is well combined.

Then add the rolled oats and the chopped walnuts and mix gently.

Time to have some scooping fun! Using a scoop spoon, spoon the batter onto the baking tray, 2 inches apart. Press the cookies with your palm to flatten.

Make sure to bake until the oatmeal cookies are browned, about 2-5 minutes, and let them cool on a cooling rack.

Finally, put a tablespoon of ice cream on one cookie and spread it a bit. Put another cookie on top. Repeat with the rest of the oatmeal cookies sandwiches and enjoy!

Why are my oatmeal cookies hard?
This usually happens when you overmix the batter.

There could be several reasons:
You used too much flour (remember, just 2 cups). Make sure not to pack too much flour tightly into the cup. After scooping, lightly shake the flour.
