This Chorizo Roast Cod is a great dinner recipe option to make a baked cod with tomatoes.

Ingredients

3 tablespoons heart healthy* Mazola® Corn Oil + 2 tablespoons + 1 tablespoon

4 cod fillets (or any white fish)

2 spicy chorizos, sliced

1 cup broccoli

1 large garlic (sliced in half)

10 cherry tomatoes

2 tablespoons capers (drained)

2 tablespoons fresh parsley (chopped)

Salt and pepper to taste

How to make the Chorizo Roast Cod

Preheat the oven to 350 degrees.

Sprinkle 3 tablespoons of Mazola® Corn Oil into a roasting pan and add the chorizos. Season with a little salt and black pepper and roast for 3-4 minutes.

Meanwhile, spread 2 tablespoons of Mazola® Corn Oil and arrange the cod fillets on a baking sheet.

Add the broccoli and scatter the chopped garlic on top of the fillets.

Spread the cooked chorizo slices around and on top of the cod fillets.

Arrange the cherry tomatoes on top of the fish, add the capers and the parsley.

Drizzle with 1 tablespoon of Mazola® Corn Oil and cover with foil and put it into the oven.

Roast for 25 minutes at 350°.
